Pasta with Chicken & Pumpkin Cream Sauce (WEM)

*Yields 2 large portions or 4 side portions (macros based on 4)
Ingredients
3 cups uncooked dried farfalle (bow tie)
2 tablespoons butter
1 pound boneless skinless chicken breast halves, slice into small bites
1 teaspoon finely chopped fresh garlic
1 cup canned pumpkin puree
1
2 cup chicken broth (I use better than bouillon low sodium chicken base)3
4 cup heavy cream1 tablespoon chopped fresh thyme leaves

2 teaspoon salt1
2 cup coarsely chopped toasted pecansInstructions
- Cook pasta according to package directions. Drain; keep warm.
- In a large skillet over medium/high heat melt butter until sizzling.
- Add chicken and cook over medium-high heat, stirring occasionally. After about 8 minutes add the garlic and cook for another 2-4 minutes or until chicken is no longer pink in center.
- Combine pumpkin, chicken broth, whipping cream, thyme and salt in bowl. Cook over medium heat 3-5 minutes or until heated through.
- Pour over pasta, add the chicken and gently toss to coat. Sprinkle with toasted pecans.

I don’t think a little pasta will harm her as she probably only had 1 spoon full, LOL. I don’t eat pasta or any other carbs (haven’t for 5 years now) but when white truffles are available, which is now, I will order a half portion and really doesn’t effect me. I do have a pasta recipe which is similar to the
“HOLY GRAIL” pizza dough, it’s awesome, crispy and you can’t tell it’s not flour dough. Fooled all my “CAB FRIENDS” and they prefer it. The pasta, I have not tried yet, stay tuned!!!!!!

I had this with a 7 oz box of Banza chickpea pasta. I used bacon fat instead of butter. I like it better without the pecans. I use bone broth instead of plain broth. It makes four satisfying servings and it’s addictive. Cal: 450, fat: 23, carbs: 29, protein: 33. I have to be careful and ration it out. Too good 😛
