Peaches with Turkey, Goat Cheese, and Pecans (FM)

Peaches_with_turkey_goat_cheese_and_pecans_post

*yields one portion

Ingredients
1 large peach cut into 1/2 inch thick round slices
3 tbsp goat cheese
3 slices of turkey breast
2 tbsp fresh basil leaves
3 tbsp pecan pieces
1 tbsp olive oil
1 tbsp balsamic vinegar

Instructions:

  1. Place the peach slices on a plate and top evenly with the turkey slices, goat cheese and pecans.
  2. In a small bowl combine the olive oil, balsamic and fresh basil, then top the peach pieces evenly with basil leaves coated in olive oil and balsamic. Serve.

    So simple! Yet I bet it is so full of flavor! I can’t wait to try it out. It would be a nice appetizer for parties as it looks so pretty!

    Love peach season! I had chicken and zucini kabobs last night with grilled peaches. And made this for lunch post workout today. I had to substitute for almonds and Motz cheese because it what I had on hand but it was Sooo good. Sweet and savory in all the right places. And filling. Any one have any good peach putting tips? I can get the ends off well but my center rings gets..messy.

    I FINALLY got around to making this today as an appetizer for our BBQ. My boyfriend and I like it alot!!! It is so easy to make and so aesthetically pleasing! What I love is that all the flavors merge together well…Sweet, salty, tangy… It’s just so full of flavor. LOVE IT and will make it again!
