Peanut Butter Banana Cake (FM)

PeanutButterBananaCake

*Yields 9 portions. This cake is pretty dense. I had one one of these squares and it kept me full for hours.

Ingredients:
2 cups almond flour
3 tsp baking powder
1 ripe banana
2 chia eggs (2 tbsp ground chia seeds mixed with 6 tbsp water)
1 cup Swerve Sweetener (granulated)
1 cup almond milk
1 cup peanut butter
pinch of salt

Instructions:

  1. Preheat the oven to 350F degrees.
  2. Add all the ingredients into a blender and mix until smooth.
  3. Grease a 9×9 inch square cake pan. Pour the batter into the cake pan and create an even layer.
  4. Bake in the preheated oven for 40-50 minutes until golden brown on top and cooked through (if a toothpick inserted into the middle of the cake comes out clean it’s done).
  5. Let the cake cool down for an hour and then cut into 9 even size squares. Garnish with sugar free jam and a banana slices.

    Made this for breakfast this morning. I didn’t have chia seeds so I used 2 real eggs. Came out great! Whole family liked it and my 4yr old asked for more later. But I had a question for @zuzkalight : Is there something I can substitute for the erithrytol that will still be low-carb? It was too overpoweringly sweet, in a way that I don’t really care for; I’m currently dealing with some gastritis issues and I’m finding that I’m having a hard time digesting things with erithrytol in them. Other than that, this was a great recipe!

      Hi Aleta, I don’t know if this help but if I am using Swerve I take like 1/4 of what is in the recipe 😉

        Hi @Zuzana1982! Thanks for the response. I’m not sure I understand what you mean, though. Do you only use 1/4 of what the recipe calls for, or do you only eat 1/4 of the serving size? I can’t find Swerve for sale anywhere in my city. Our natural grocers don’t carry it. But they do have a granulated erithrytol, and so that is what I’ve been using. I was wondering if Stevia might be easier to digest. Also thought that next time I try this recipe, I’ll add a couple tablespoons of cocoa powder and make chocolate peanut butter banana bars. 😋

          I use only 1/4 of what the recipe calls for 😉 as I don’t have the original swerve as well and the recipes are too sweet for me. Great idea of adding cocoa powder ;-)) I am drooling right now!!!!

              Hi Aleta,
              You probably already figured this out by now….. Swerve is erythritol. If you eat too much, it does cause gas. I sometimes use half erythritol and half maple syrup and also monkfruit sweetener is pretty nice too.

                I was using a generic erythritol, which I think was the problem. I finally found one store here in my town that carries Swerve, and I tried it. The flavor is much better and it doesn’t seem to bother my stomach, although I’ve only tried it in very small quantities. I’ll continue to experiment with it. But thank you for your suggestions. If the Swerve doesn’t work out I’ll give them a try. 😊

          Hi- I found swerve at whole foods. The only whole foods I know of in Oregon is in Eugene??

            That’s so so sweet of you to look that up for me. Thank you! I believe there’s one in Portland, as well. But Portland is a 45 minute drive and Eugene is a 60-75 minute drive. I finally found it here in Salem at a Natural Grocers, both the powdered and granulated versions. 😊

      I made this recipe and it did not cook threw, was completely raw in the middle after 50 min. I made the original banana cake without peanut butter and was amazing. I usually don’t fail at a recipe but maybe I will try the eggs instead of chai, any thoughts out there???? I also substituted almond milk for water buffalo milk

        I think I had to cook mine a little longer than the recommended time. I used the old toothpick test to make sure it was done – stick a toothpick in the center of it and pull it out. If it comes out clean without any chunks or goo stuck to it then it’s done. Don’t Know if that helps or not.

          At the 40 min mark its was all giggly in the middle and I knew it was’nt cooked so left it in for another 10 min. The top was very brown and yes did the toothpick insert and was not cooked. I couldn’t leave it in anymore as the top would have burnt. I left it on counter 3 hours and when I went to cut it I found it uncooked. It was terrible very gooey and raw, threw it out, sad

      Hi Aleta. I can’t use any sweeteners that is not molasses, honey, etc because it’s upsets my stomach as well. I think recipes such as this don’t need much sweetener cause bananas are sweet, especially really ripe ones. The amount of honey or molasses that you can get away with is minimal. Throwing in a few dark chocolate chips isn’t always a bad idea either😊.

        I’ve never really been afraid of actual sugar, but I thought if I was going to try the low-carb thing I’d go the whole way. However, a lot of the substitutes are very difficult for me to digest. I may not be able to be low-carb completely. I think I may have to use some natural sweeteners, just less of them and see how I do. I don’t really like the taste of zero-calorie sweeteners, either. For some reason, they seem way more sweet to me than actual sugar does. I think I will try just using less of the natural sweeteners.

        But I have to say, I have managed to gain almost 1.5 lbs, while still losing 0.4% body fat in the last week. I’ve always struggled in the past to maintain my weight while losing body fat, so I’m encouraged by this. I would like to keep going with it and see what happens. 😊

    Hope you had a lovely weekend Z, and that Jesse, Cat and Dogs are good 🙂

    I just have a question about Swerve sweetener –

    The sweetener is really tricky to get hold of here in the UK, but from other video’s/ recipies I understand that I can also use Erythritol – I am just a bit unsure of how much to use, and was wondering if you could advise?
    With Swerve, I believe you can use it just like you would sugar – In a recipe instead of a cup of sugar, you use a cup of swerve – Is this the same for Erythritol do you know, or is Erythritol sweeter so should you use less/ more ? Should you mix it with like liquid stevia or something?
    I’m new to sweeteners and sugar free, and just a bit… confused.

      Swerve is just a brand name for erythritol 🙂 They are the same thing. Hope that helps!

      Yes it is, but the ratio of other ingredients vs banana balances it out and it still is a low carb recipe.

    Hi Zuzka, i´d like to ask, if half cup is 8 tbsp (its in your superfood meal plan) of almond flour, than 2 cups will be 32 tbsp ?
    It looks pretty logic, but i was thinking if its not too much 🙂 Maybe i made mistake.

    Hi Joesy, What size did you use for the pan ?, I used a 7,5 inch Square and happened the same as you, I a think it is the size. Will eat it anyway😁
