Peanut Butter Fudge Bites (FM)

PB fudge bites POST

I love peanut butter desserts and this one has only a couple ingredients, is super easy and doesn’t require baking!  If you like peanut butter fudge, you’re going to love this 😉

*These are a bit calorie dense but it makes 16 servings so just be aware of portion control. I wouldn’t have more than one serving at a time. I share these with Jesse and our friends and family members.

Ingredients:
1 cup peanut butter (I used organic, all-natural from Whole Foods)
8 oz cream cheese, softened at room temperature
1 cup sugar-free whip cream (you can make it yourself out of heavy cream by whipping it in a blender at a super high speed)
2 tablespoons erythritol (I used Swerve)

Instructions:

  1. In a medium bowl add the peanut butter and cream cheese, whip together with a hand mixer until blended and smooth.
  2. Add the erythritol and blend again.
  3. Add the whip cream and use a fork to mix together.
  4. Line an 8×8″ pan with parchment paper then use a spoon to spread the peanut mix evenly in the bottom.
  5. Let the pan freeze for an hour before removing and cutting into 16 squares.

Calories: 184.2
Carbs: 4.5 g
Net Carbs: 3.7 g
Fat: 17.1 g
Protein: 4.9 g

    Have you ever used pb2 peanut butter powder? I was curious if you could use that to cut calories or if it would change it too much. I love peanut butter desserts, so I will be making this for sure.

      No I have not, but I just looked it up and I think I want to try it. Thanks for mentioning it, I think that is actually a really good substitute. It seems it has just 3 ingredients and the sugar content is pretty low – depending on how much of the peanut butter you can make out of the 2 tbsps.

        I really like it in smoothies. I haven’t tried to make peanut butter with it yet because I’ve read it isn’t quite as tasty when using it as a replacement for the spread, but it is great to use for baking or smoothies. I’ve even read sometimes you can use it instead of flour as a thickened (depending on the recipe of course).

          Never heard of the powder but I looked it up on amazon and it looks interesting. I like the 85% less calories/fat part 🙂 I’m going to try it and see if I like it. I have to admit I don’t make Zuzka’s desserts , they look good but the sheer amount of calories is scary. And I don’t trust myself to have just one piece 🙂

        Hi Z..when using sour cream or yogurt or even heavy cream, what % of each item would u recommend?

          Not sure what do you mean by %. I usually measure by tbsp or cups as the recipe requires. I don’t avoid meals that are high in fat, I just have a smaller portion and make sure to balance it with the rest of the meals through out the day.

            Sorry I should have been more specific. ..what I meanthink to say was 0% or 2% fat yogurt..14% fat sour cream?…35% fat heavy cream?

              Hi Lucy! I’m not Zuzka but I saw your question & thought this might help a little even though it doesn’t answer your question exactly! — most of the dairy products in the U.S. don’t list percentages the same way as I think they do in other countries. Many U.S. dairy products are only labeled as full-fat, light, or no-fat. I’m not completely sure but I think Zuzka usually uses the regular/full fat version.

    Peanut butter is one of my all time favorite foods! So sad it’s not paleo, but I may have to try this recipe anyway…once in a while can’t hurt…right? I still have a stash of Zuzka’s brownies frozen for this Saturday’s treat. Maybe next week! I have been doing so great with diet for 4 weeks now and am seeing great results! More definition for sure!

      Update : have these in the freezer now. I licked the spoon and OMG! Delicious. I calculated the carbs for my sister who is keto: 4.5 each with the natural peanut butter I used (Teddie), or 3.1 net carbs if you subtract the fiber. I made my own whipped cream with a charger by using 1 cup heavy cream and a tsp vanilla. Will on both the mini cheesecakes and the fudge when I serve them. Although I am only leaving out one of each dessert for my sister and me and freezing the rest ! I can’t be trusted!!

    One question–you used powdered swerve/confectioner’s style? Anyone try with regular/granular erithrytol ?

        Děkuji, koukala jsem, že se prodává, ale ta cena za to množství je teda dost vysoká. Ještě přemýšlím nad Lučinou, snad to je podobné.. nevím 😀 Ale tu si umím sama vyrobit 🙂 Tak bych použila to… co myslíš? Dokážeš porovnat? 😀

          Lucina je taveny syr, ze? Ak si dobre pamatam take stvorceky su to. To by som nepouzila ako cream cheese. Ta chut je ina a myslim, ze cely dezert by skoncil v kosi 🙂 Okrem tej Philadelphie veru neviem co este by sa dalo pouzit. Mozno grecky jogurt? Silny, husty aby netiekol. Mozno s tym by som to riskla 🙂

            Nene, není to tavený sýr, je to takový smetanovo tvarohová kostka. Prakticky z toho řeckého jogurtu by se to dalo udělat, to asi vyzkouším, co jiného 😀 Tak děkuji 🙂
