Peanut Butter Poppers (FM)

*Makes 16 Poppers
Ingredients:
1/4 cup coconut flour
1/4 cup cocoa powder
1/4 tsp baking soda
1/4 tsp sea salt
3 large eggs
1/4 cup coconut oil
1/4 cup honey
1/8 tsp vanilla stevia
Peanut butter frosting:
1/4 cup creamy peanut butter
1/4 cup palm shortening
2 tbsp honey
⅛ teaspoon vanilla stevia
⅛ teaspoon sea salt
Instructions:
- Preheat oven to 350 F degree.
- Add all dry ingredients into a food processor and blend together.
- Add the wet ingredients and pulse until smooth.
- Scoop batter onto large parchment paper lined baking sheet using 1 tbs scoop. Scrape all the batter from the food processor with spatula. Don’t waste any!
- Bake for 7-9 minutes.
- Cool for an hour.
- Fill with peanut butter frosting.
Instructions for peanut butter frosting
Add all ingredients into food processor and pulse until fluffy.

Oh…my…gosh! Those sound amazing!
Do you think coconut oil would work in place of palm shortening? I have no types of shortenings, and usually replace it with coconut oil in recipes…but I don’t know anything about palm shortening. So I’m not sure if that would mess up any consistency. 😮 I’m drooling!!!

Mmmm, I wound up making them yesterday (and tried it with coconut oil) and they were delicious! I get butter from a nearby farm and I bet that would be amazing in there!!! They really reminded me of whoopie pies…I can imagine a variety of fillings would be tasty! I’m looking forward to experimenting a little bit! 😀

I use Spectrum vegetable shortening. It’s a non-hydrogenated palm oil shortening. It’s works wonderfully. Nutiva makes a non-hydrogenated shortening also. Hope you can order it online from Brazil! 🙂

Hi Tanya, I have never heard about it. But I will research to see if it is available here. I know they have palm oil that solidifies and it becomes a shortening actually but I do not know if it is same thing. I will try with coconut oil anyways. Thanks. See you, take care.

These are soooo good! I made them tonight after dinner. They are like what I have seen called a “Whoopie Pie”. 🙂
I used erythritol+a little bit of powdered sugar and vanilla instead of vanilla stevia. I also had to use some almond butter mixed with what I had left of peanut butter.

I made these last night, substituting butter for the palm shortening since I don’t have any of that and have had a difficult time finding it, and OH MY GOODNESS!!!!!!!! These are seriously my new favorite dessert. And the best part is, I don’t have to feel super guilty about having one of these for dessert because they aren’t very unhealthy at all. Thanks so much for this recipe! 😀
