Pecan Apple Oatmeal (WEM)

*Makes 1 Portion
Ingredients:
1 cup unsweetened almond milk
1/2 cup rolled old-fashioned oats
1/2 tsp ground cinnamon
1/2 medium Granny Smith apple, diced
1/4 cup pecan pieces
1/2 tbsp honey
1/2 scoop vanilla whey protein powder (14g, 50cal; total carbs 3g)
Instructions:
- Add 3/4 cup of the almond milk to a small saucepan and bring to a boil over medium heat. Add the oats and cinnamon and stir to mix. Reduce the heat to medium-low and simmer, stirring occasionally, 7 to 10 minutes, until the almond milk is absorbed and the oats are sot.
- Remove from the heat and mix in the apples, pecans, and honey.
- Combine the remaining 1/4 cup of almond milk with the whey protein powder in a blender. Blend on high until smooth.
- Pour the protein mixture over the oatmeal and serve.

Yessss. This is basically what I make most mornings after working out. Oatmeal with pecans, pumpkin pie spices, apple or pear, coconut oil, whey.
Did you guys know that pecans are one of the richest foods in antioxidants? Google foods highest in antioxidants and you’ll see. The level and variety of antioxidants in your body are so important for preventing the body from disease. You can determine your likelihood of developing a disease or poor health condition by testing your antioxidant levels. The hospital where I will soon do a residency actually uses an antioxidant scanner to monitor the antioxidant levels in patients in the Oncology department, to prevent people from wasting away after chemo/radiation, and to see how the body’s ability to assimilate nutrition from food is affected by treatment. Anyway, pecans rule! Eat pecans!

This is a big serving of oatmeal 😅 I think next time I’ll turn it into 2 serving, it’s so filling and delicious.

This was really tasty! I’m going to convert this into a just-and-hot water busy morning/hiking breakfast by tweaking it to use quick oats, dehydrated apples, brown sugar instead of honey and a mixture of milk and coconut milk powder.
