Power Greens Breakfast Casserole (FM)

All my vegetarian friends out there are going to love this.  I’ve been really liking the idea of casseroles lately, they’re easy to assemble and then just put in the oven while you do other things PLUS you can make enough to have leftovers all week  which saves time and money!

Power Greens Breakfast POST

*this recipe makes 4 servings – you’re using 2 round pie/ casserole dishes  (1/2 pie slice each serving)

Ingredients:
1 bag (10 ounce) pre-cut mixed greens – the one I got was a mix of swiss chard, kale, turnip greens and spinach
olive oil
10 eggs
2 green onions, diced
1/2 cup feta cheese
1/2 cup shredded mozzarella cheese
pinch of onion powder
pinch of garlic powder
salt & pepper to taste
optional sour cream topping

Instructions:

  1. Preheat oven to 350 degree F.
  2. In a large saute pan over medium heat, drizzle a little olive oil and add the bag of greens.  Keep stirring until all the greens are wilted down, only take 2-3 minutes.
  3. Spread the bottom of your casserole dish with the wilted greens.  I used 2 round pie/ casserole dishes and wiped them with a little olive oil to grease them and help the casserole not stick.
  4. Then evenly distribute 1/2 cup of feta and a 1/2 cup of mozzarella over each dish then sprinkle one green onion.
  5. In a medium bowl, whisk your eggs along with the onion powder, garlic powder, salt and pepper and pour over evenly into each casserole dish.  You’ll have to use a fork to stir it a little so it’s even on the top but there will be greens and cheese visible (you don’t have to submerge everything).
  6. Let bake for 35-45 minutes until the top is golden brown. Remove from the oven portion out your slice and I enjoyed mine topped with a little sour cream OR if you want a little spice, Sriracha could be good too 😉

    I love the combinations in this recipe. I also love the flavor of greens and eggs and cream.

    This is essentially a frittata. I grew up eating frittatas several mornings per week, having grown up with traditional southern Italian parents and lots of chickens. 🙂 I also like to add sauteed mushrooms and sometimes some pesto to the mix. Mushrooms, greens, and some cheese (even without the cheese) is my favorite combination.

    This is a very, very healthy meal to have every day! It was a reason I was always skeptical of the previous cholesterol dietary guidelines, which…..have been proven inacurrate. Eggs are good for you!

      I have to say, though, that in Italian traditional cuisine, cheese is not as emphasized as Americans like to assume. The frittatas I grew up eating did not have much cheese. Usually just eggs and vegetales, with sometimes a little bit of a salame or prosciutto or something thrown in there. But usually a vegetarian meal, with perhaps so dry cheese shaved on top at the end if desired.

        I do not like much cheese so its good to know this recipe is fine without it. Im starting this plan next week and was looking over the recipes. I think I will try it the way you stated, with mushrooms and no cheese. Thanks!

    Lovely Zu…but 10 eggs! Soo many…I will make it with 3 eggs and finish it off in one shot…I mean one bite! 🙂

      Hi Fernanda, the 10 eggs is for 4 servings so one serving only has 2.5 eggs 🙂

        Hi Michelle, I understood but 4 servings means what exactly? To eat 4 times or it serves 4 people? Because eggs you are supposed to eat fresh. Unless she would eat 2 servings and Jesse 2, then the recipe is fine. I can not keep it for next day because eggs do not taste good warmed. See you and take care.

          4 servings means it either serves 4 people 1 time or it serves 1 person 4 times.

          I know what you mean about re-heated eggs but this dish is excellent served cold as well. 🙂

    Hi Zuzka! I tried this recipe today, and it was soooooo good! I don’t really cook, but this was very easy and well worth the short time it took. I’m really trying to get off the carbs and sugar, but it isn’t easy! Thanks for posting this. -Bill

    I don’t want to disturb Zuzka plan, but I personally can’t eat dairy products. But I’ve discovered an alternative to feta cheese. You can make a brine of salt with water and let firm tofu marinated for ~ 12 hours and the taste is surprisingly similar. But don’t let the tofu in the salty water more than 24 hours because it comes really too salty. There is also other “simili cheese” made of soy that you can buy, but I don’t like the taste and they are highly processed. That’s why I’m so pleased with this faux-feta. It’s only tofu in a little salty water.

    FYI it says 1/2 cup for each feta and mozza in the recipe, but 1/4 cup in the notes … I’m going with 1/4 cup

      It is 1/4 for each dish. Z mentions she did 2 casseroles, so the quantities are correct.

    Just starting out on zuzkalight programs .Thus far really happy with the workouts.
    It’s the Z meals I’m I’m going to have trouble with, as I don’t have time in morning for cook a breakfast , nor able to do cooked lunches
    Can someone tell me how to get to the recipe home page so I can select alternative recipes from the lists under various headings ie breakfast dinner snacks etc I can’t seem to find it , all I can find is the premade weekly recipe list selection

      Sure — just click Nutrition on the menu at the top of the page. Scroll down and you should see tabs where you can select Breakfast, Lunch/Dinner, etc… 😉
