Protein Pancakes filled with Hazelnut Chocolate Spread (FM)

*This recipe combines 2 of my all time favorite recipes to make this deliciously sweet breakfast (or dessert) This could easily turn into a calorie dense recipe however, so keep your fitness goals in mind and be careful of how often you enjoy this meal.
Low Carb Protein Pancakes:
2 eggs
2 oz cream cheese
2/3 cups almond flour
1 scoop of vanilla protein powder
2 teaspoons erythritol
pinch of salt
Sugar-free Hazelnut Chocolate:
1 cup macadamia nuts
1 1/2 cups hazelnuts
3 tablespoon unsweetened cocoa
1 scoop vanilla protein powder (or erythritol)
(optional coconut oil)
Instructions:
- Take all the ingredient in the chocolate spread and blend together well (I used my vitamix – you can see the process by watching the video).
- Spread about 1 1/2-2 tablespoons of the chocolate spread onto a piece of parchment sheet (per pancake) and put in the freezer for at least 15 minutes. Take the remaining chocolate spread and store in the fridge.
- Rinse/ wash the blender then add all the pancake ingredients and blend until smooth.
- In a frying pan over medium heat, add 1/2 tablespoon of butter (or olive oil if you prefer) and let heat until completely melted and bubbling.
- Pour 1/4 of the pancake batter into the pan, let cook about 2 minutes (until starts to bubble) then peel off the chocolate disk from the freezer and place in the center. Pour over another 1/4 portion of the pancake batter to cover the chocolate.
- Using a spatula to test that the batter is cooked on the bottom (should be browned around the edge) and becomes easy to flip. Let the top side cook until browned then plate and enjoy!

Carbs: 5.6 g
Net Carbs: 2.8 g
Fat: 20.3 g
Protein: 13.9 g

P.S. Summer is coming! I have some back issues that make it hard to do your summer shred workouts (something is going on with my lats…) – I was wondering if I could make a suggestion for a new summer series that was based around YOGA and lots of bodyweight CORE exercises. Yoga seems to be the only thing I can as of the last few weeks, and unfortunately I think my recovery won’t happen until summer.

Hi Monica, you should try my postural therapy routine for upper back and do it daily until you fix the problem. It might help you speed up your recovery. I am currently putting together different programs for different goals and needs, and the bodyweight program mixed with yoga is definitely on the top of my list.

Does anyone out there own a vitamix blender? And if you do, can I ask about what you paid for it? Or even just the model? I’m looking on Amazon and some of these damn things are like $400-$700!!! WT**?! 😱
Anyway, just trying to figure out a good one that won’t put me in the poor house.

I bought a refurbished one from their website. It’s still expensive, but depending on the model, it’s about $100 plus less than the regular price and it still comes with a 3 year warranty. They are definitely worth the price!

Do you ever eat any fruit during the day? Like say, can you add an apple or some berries to some of the FM meals?

In the nutrition section Zuzka says you can eat low GI fruits without having to earn them. Foods higher on the GI, like bananas, are considered workout earned meals. Like the other food groups, it’s important to eat according to proper portion sizes. The portion size for fruit is one cupped hand for women or two cupped hands for men.

I do – I don’t plan ahead eating fruit low in GI – I just grab a portion of fruit up to 4 times a day whenever I feel like it. When I put into the Food Journal an apple for snack, it just means that Im happy with a piece of fruit for snack, however it’s not the only portion of fruit. I’ll make sure to make it more clear in the journal.

also, if I’m not hungry during the day, should I still eat an FM meal?Sometimes I fear that I do not eat enough sometimes, and I’m trying to lose 10-15 pounds. I’ve been following your workouts for about 2 weeks now, and I’m loving them 🙂 But I am about 5’4″ and 140 pounds, and I know I have muscle, but I would really like to slim down. Is there anything that I can do to yield results faster? Also where can I purchase the supplements that you take?

also, one more question…
if i already did my workout in the morning and had my FM or WEM meal afterwards, what if my dinner has rice or sweet potato in it? Am I still able to eat those, or should I just omit them since they are carbs?
