Ramekin Pizza (FM)

*Yields two portions

Ingredients:
1/2 lb ground beef
1 shallot coarsely chopped
2 cloves garlic minced
3 tbsp heavy cream (you can use coconut cream)
2 tbsp olive oil
1/2 cup brown mushrooms chopped
1 cup low carb tomato sauce (I use RAOS)
1 cup shredded mozzarella cheese
4 thick slices of mozzarella cheese
Salt & Pepper

Instructions:

  1. Preheat oven to high – or broiler.
  2. Heat up the olive oil in a non stick skillet over medium heat and then add the onions. Saute for 2 minutes and then add the mushrooms. Saute for 3 minutes and then add the minced garlic. Saute for another minute.
  3. Add the ground beef and cook until well done. Add the tomato sauce, cream, and 1 cup of mozzarella. Cook until the mozzarella melts in the sauce. Taste and add salt & pepper if necessary.
  4. Transfer the mixture into two ramekin dishes (8 oz each), place two thick slices of mozzarella on top of each and place them into the preheated oven. Bake until the mozzarella on top melts and starts turning golden brown.
  5. Take the ramekins out of the oven and let them cook down for 5 minutes. You can can garnish them with fresh basil leaves. Serve.

      She said two ramekin and recipe is two portions. I didn’t have ramekins so I cooked in a pie tin. Half for me and other half for my husband. Is really good. 😋😋😋😋😋

    This ”pizza” has no base 🙂 Looks like spaghetti bolognese topping with tons of cheese but no spaghetti. Way too rich to eat on its own without feeling nauseous.

    what is shredded mozzarella?
    mozzarella is a soft gummy cheese, however shredded cheese are hard cheese you can grate.
    so I am confused, I only know one type of mozzarella!

      You can shred this type of mozzarella… I just did. Real mozzarell not the fake type with wood pulp fillers.

    Is it right, that 1/2 lb is round about 250 g, or 0,25 kg?

      Yes, round about. 0,23kg (226.8g) to be precise. 😉

            I actually haven’t made it yet, my dog had a vet appointment today after work so I didn’t have time to cook. I went to Urban Plates and got the grass fed beef with broccolini and roasted brussels sprouts 🙂

              I feel like it’s just me… but I keep getting confused about portion sizes in some of the recipes, lol. For the sauteed chicken salad recipe tomorrow night, 1 lb chicken (16 ounces) is so huge and doesn’t seem right to me. I know we are supposed to have the chicken salad again on Tuesday, but that would still be so large (8 ounces) each day, right? Also, I would assume that all the other ingredients besides the chicken would be halved for each meal, right (ie 1 cup strawberries, 1/2 tbsp shallot… except for maybe the arugula since it’s only 1 1/2 cups)?
              I thought maybe we were making so much extra chicken to add into the soup later in the week, but then I saw that the Wednesday grocery list calls for getting even more chicken, which again seems like way too much. Am I reading the shopping/recipe lists wrong? What are you going to do?

                Hi Katie! I’m actually leaving for vacation in a couple of days so I am not following the meal plan until I get home. I was looking at that recipe and I noticed that it seemed like a lot of chicken. I will probably split it into 4 portions and if there are leftovers, just save it for snacks 🙂

                    Thank you! We’re going to Lake Tahoe, I cannot wait! I decided to make another breakfast casserole for this week because I really enjoyed it and we had a lot of eggs at our house still. For lunch, I am just going to do salads or fish with veggies at work, there is a little place near my office that has really good, healthy stuff. For dinners I am just having some pre-cooked rotisserie chicken and some green beans. Trying to somewhat follow the principals of the meal plan but I didn’t want to go grocery shopping and end up with wasted food when we leave town 🙂 I hope the next week goes well for you, I’ll be jumping back in to the meal plan when we return 🙂

    I am just starting the meal plan (very excited), but the only problem is that I am allergic to dairy. I can usually find dairy free substitutions, but this ramekin pizza meal is pretty much all cheese. Do you have another suggestion for a FM that I can substitute for this one?

      You can choose any other FM meal from the website. Just keep in mind, I have stated that this meal plan is not for people with food intolerances, so might run into this problem again. However, if you check each week ahead of time and adjust your shopping list, you can do it.

        Okay great, as long as I can substitute any of the FM I should be okay. I watched your coffee talk about not having any food intolerances, which is great. But for us less lucky people we have to modify 😉 Thanks for getting back to me so quickly! I’m really excited about this meal plan. I just started yesterday but already I’m noticing positive improvements in my digestion and sleeping!
