Red Cabbage Grapefruit Salad (FM)

Red cabbage is a major immune booster and one of the top foods rich in vitamin C. The capsaicin found in Jalapeño peppers have the ability to boost your metabolism by raising your body core temperature, and suppress your appetite for large meals. Grapefruit is another great source of vitamins, nutrients and fiber and this whole salad is great for fighting inflammation and regulating your blood sugar levels. Besides all these health benefits, it’s a very juicy, delicious and refreshing meal.
*Yields one large or two smaller portions
Ingredients
1 large grapefruit, chopped
2 cups red cabbage, chopped
1 large carrot, shaved
1/2 jalapeno pepper, finely chopped
1 inch freshly grated ginger
1 tbsp avocado oil
Instructions
Add all the ingredients into a large bowl and mixed until well combined.

This salad is unbelievably delicious! I used Meyer Lemon infused olive oil and it was the perfect light summer lunch. What a great way to detoxify your body … highly recommended 🙂
