Roasted Carrots and Broccoli w Asian Dressing (FM)

*This recipe makes approx. 2 portions.  It’s a great, easy stand-alone lunch option OR a side to go along with a roasted salmon or chicken.

Ingredients:
1 bag of peeled, baby carrots (approx. 16 oz)
3 cups of broccoli florets
3 garlic cloves, minced
2 tablespoon olive oil (or algae oil)
3 tablespoons low sodium soy sauce (or tamari)
1 tablespoon stevia, erythritol, or Choc Zero Maple Syrup
2 teaspoons sesame oil
1 teaspoon rice vinegar
1 teaspoon sriracha
2 teaspoons sesame seeds
salt & pepper

Instructions:

  1. Preheat oven to 425 degree F and lightly oil a baking sheet with coconut oil (or line with non stick foil).
  2. In a medium bowl toss together the baby carrots with 1 tablespoon of olive oil, 1 minced garlic clove and a pinch of salt & pepper. Evenly distribute the carrots over the baking sheet and let roast for 15 minutes.
  3. In the same bowl, toss the broccoli florets with the remaining olive oil, 1 garlic clove and a pinch of salt & pepper.
  4. In a small bowl whisk together the soy sauce, sesame oil, rice vinegar, sriracha and the last remaining garlic clove.  Set aside.
  5. When the carrots have been roasting 15 minutes, remove from oven and add the broccoli to the baking sheet, use a spatula to flip and toss the broccoli and carrots together and let lay flat.  Add baking sheet to the oven for a 10 minutes (15 if you like your broccoli/carrots more tender).
  6. Remove from oven and add broccoli and carrots to the same bowl, pour over the soy sauce mixture and toss well to evenly coat.
  7. Portion into 2 bowls and sprinkled on sesame seeds, enjoy!

    But where is your protein? I know Broccoli hast some, but not enough.
