Roasted Carrots and Spicy Ground Beef (FM)

*yields 3 smaller portions or 2 large portions (macros based on 3 smaller portions)

Ingredients
6 large carrots sliced into small french fry like pieces
1 cup or a full handful of fresh chopped kale leaves
2 medium size shallots coarsely chopped
1 lb ground beef
1 tsp ground cumin
1/2 tsp ground chili pepper
splash of white wine
1/2 lemon juice
salt & pepper
3 tbsp fresh cilantro finely chopped
2 scallions
2 tbsp coconut oil
1 tbsp oil for sautéing (I use algae, avocado or grape-seed)

Instructions

  1. Preheat oven to 375 F degree. Add the sliced carrots, and 1 tbsp coconut oil  into a bowl and coat each carrot piece in oil using your hands.
  2. Grease a large baking sheet with 1 tbsp of coconut oil and spread the greased carrots across in an even layer. Bake until soft and slightly charred (about 40 minutes).
  3. Heat up a large non-stick skillet over medium/high heat and add the shallots. The pan should sizzle. Cook the shallots for about 3 minutes until translucent. Then add the beef.
  4. Stir frequently until the beef is seared and there are no red pieces. Then turn the heat down to medium. Add the chopped kale leaves and cook for a minute.
  5. Add the white wine, cilantro, scallions, cumin, chili pepper, lemon juice and salt & pepper to taste. Cook for another 2-3 minutes. Add salt & pepper to taste.
  6. Serve with roasted carrots.

    Hi Zuzka,

    Thanks again for another healthy delicious meal option! I do have a question though. My main meals revolve around 2 cupped hands of veggies, about 3 oz of protein (I feel like that’s palm size), a couple of nuts and a splash of healthy dressing, but I’m finding myself hungry not too much later. Am I eating enough? Do you have any suggestions?

    Also, I really want to purchase a “beast” and have been using a 25lb kettlebell for awhile now. I can’t decide if I should try 40 or 45 lbs? I’m only about 5’5 and around 100 lbs, but feel pretty strong. Any thoughts? I just know it’s a big investment. Thanks again, and can’t tell you enough how much you have changed my life!!! Also, you should come to visit Seattle. It’s not far from LA and we have lots of great coffee 😉
