Roasted Cauliflower and Mushrooms Salad Recipe

Nutrition is a key element when it comes to health and fitness so I spend quite a bit of time to search for recipes that are healthy and delicious at the same time. I believe that I can convince just about anyone that eating healthy does not mean sacrificing taste. I hope you will enjoy this recipe. I loved it.
Here is what you will need and the step by step recipe is in the video above.
1/4 head of cauliflower
1/2 onion
1 cup of mini portobello `mushrooms
about 3-4 cups of leafy greens like spinach and arugula
1 handful of cashew nuts
curry
salt
pepper
parsley
cilantro
fresh lime

Zuska how much of the salad do you eat for one meal? Is it all for one meal? Or should I just eat half of it?

I’m so happy you also try to find some easy recipes like this one. And it’s cheap as well which is even better (: I’m a student so I really need more recipes like this. Quick, easy to make, cheap and healthy at the same time.

Great video! Would this be a good pre-workout or post workout meal? I guess protein balance with the veggie carbs is my biggest concern (if that makes sense) What would the serving for a woman be?

I made this for dinner today. I don’t like goat cheese so I used some cream cheese and feta cheese instead. It was good, but I think I roasted the veggies a little too long. I am going to try to make it again, and not over cook the veggies. lol. Love your healthy recipes.

Thanks! I made this tonight but with feta instead of goat cheese and it was fabulous. Even my 2 year old liked it 🙂
