Roasted Cauliflower and Mushrooms Salad Recipe

Nutrition is a key element when it comes to health and fitness so I spend quite a bit of time to search for recipes that are healthy and delicious at the same time. I believe that I can convince just about anyone that eating healthy does not mean sacrificing taste. I hope you will enjoy this recipe. I loved it.
Here is what you will need and the step by step recipe is in the video above.
1/4 head of cauliflower
1/2 onion
1 cup of mini portobello `mushrooms
about 3-4 cups of leafy greens like spinach and arugula
1 handful of cashew nuts
curry
salt
pepper
parsley
cilantro
fresh lime

Hey Zuzka you should grow some Cilantro AKA Chinese Parsley, but if you start it now it will bolt fast so maybe small sowings in a planter. It’s day-length sensitive and longer days make it go to seed swiftly. The seeds are Coriander which is great in all kinds of foods just like Cilantro can be. –Chris
