Salmon Lettuce Tacos (FM)

SalmonLettuceTacos

*yields about 4 smaller portions

Ingredients:
2 (6 oz) boneless salmon fillets
Salt & Pepper
Olive oil
Romaine lettuce

for the guacamole:
2 avocados squashed
1 jalapeno pepper finely chopped
4 scallions chopped
3 tbsp fresh cilantro finely chopped
1 clove garlic minced
3 – 4 tbsp freshly squeezed lime juice
Salt & Pepper

for the tahini sauce:
1/4 cup tahini sauce (store bought)
1/4 cup fresh lemon juice

Instructions:

  1. Preheat oven to 450F degrees, and line a baking sheet with a tin foil.
  2. Brush the salmon fillets with olive oil and season them generously with salt & pepper. Bake in the preheated oven for 12-14 minutes.
  3. In the mean time, prepare the guacamole and tahini sauce. Mix all the ingredients for the guacamole in a medium size bowl and season with salt & pepper to taste.
  4. In a separate bowl, mix the tahini sauce and lemon juice and set aside.
  5. Let the baked salmon cool down for a few minutes and then shred it into small pieces.
  6. Transfer the shredded salmon equally onto the lettuce leaves and add 4 tablespoons of the guacamole and 2 tablespoons of the Tahini sauce mixture onto each lettuce taco. Serve and enjoy!

    I absolutely love lettuce wraps. I eat them all the time for lunch at work. I like idea of using tahini with avocado.

    Thank you for posting all your delish recipes. I had a minor injury where my nose is cut, and I am wearing a steristrip/butterfly….SO NO EXERCISING!!!! It has been a week and a half. I have been feeling a bit down about no exercise and not being able to keep up with schedule. One of the things that has been keeping me sane is cooking FM recipes. I made your chocolate cheese cake and used the berry jam from the crepe recipe for the sauce. It is DIVINE! My boyfriend and I have been having 1 slice each day.

    for the salmon tacos, is it 60 oz? or 6? x2 it would be 12 oz which is more reasonable. Am I right??

        Sorry to ask again: is this recipe for 2 persons, or maybe 4? 2 x 6oz salmon? I’m asking because 2 avocados and all the other ingredients seem quite a lot:) Thanks!

            Hi Zuzana, I read that thanks,;-) But since it is a lunch recipe I was wondering if it is meant for 2 persons and if so, 2 fillets for a total of 6oz? Be patient, I just want to do it right from the beginning:-D

    somehow my guacomole mix sums to about 2 cups!! Can i freeze the left overs?

      I ended up with about that much guacamole too. I was excited at first, cuz I love guac then I realized the recipe specified only 2 tbsp per taco. So I split out what I needed for the recipe then gave the rest to my bf for his lunches. I think the guac recipe part of the overall recipe could be cut in half so there’s no leftovers. Maybe you can put some of the leftovers on your breakfast or diner or eat a tablespoon here and there as a snack?

        It was suppose to be 4 tbsp of guacamole (for ZSHRED meal plan) and the rest of the guacamole is can be eaten if still hungry.

          Thanks for the info! I must’ve missed that part. The bf found it pretty tasty, doubt there’s any left now. Lol.

          The recipes have been really tasty so far, like foodie type food. Such a welcome change to my normal meal plan. Thanks for put the Zshred plan together!

    I made this for my lunch today, planning to eat it soon. My tahini sauce is definitely more of a paste…it doesn’t look anything like the white sauce in the photo, I wonder if I bought the wrong kind? Did that happen to anybody else? I think I misunderstood and bought just plain tahini when I should have bought an actual sauce/dressing. I’m guessing now that’s what Z meant by “store bought.” Oops! It still tastes good, maybe I can thin it out with a little water 🙂

      I added some water to my paste and it made it more like a sauce 🙂 It was still delicious. This recipe was deceptively filling! I only ate one full wrap and then I ate the salmon out of the second one, I was too full to eat the whole meal.

        Hi Michelle,

        Can you verify the portions you used for 1 serving of this meal? I wan’t to make sure I get it as accurate as possible for the future once I get my cooking skills on point 😉 .

        In my mind one serving of the guac mixture would be: 1/2 jalapeno, 2 scallions, 1 1/2 tbsp cilantro, 1/2 garlic clove minced, 1 1/2-2 lime juice, and about 1/2 an avocado and the sauce would be 2 tbsp store tahini (mine was more yellow/brown), 2 tbsp lemon juice. Does that seem accurate? And then just apply half to each lettuce leaf?

        Thank you soooooo much in advance for all of your help and please do not feel obligated to respond 🙂 At least all I have to think about tomorrow is snacks! Woo-hoo!

          Hi Katie! I think that’s right! I just mixed all the ingredients and put what I wanted for the guac and tahini on the tacos, I had some leftovers because I probably didn’t use as much as the recipe called for. I also added some water to my tahini because I wanted it thinner like a dressing and it was more like a paste.

          Good luck on your fast day! I hope I can stick to the 500 calories, I may have to add a couple more snacks, we’ll see 🙂

      Hi Michelle, I am replying though it’s been a while since you posted your comment but still, maybe someone will find it useful. When I started this plan for the first time, I had no idea what tahini even was so I just bought the first thing that had tahini written on it. It was brown and made a thick paste which I liked and got used to. Yesterday, I restarted the plan once again (really wishing I stick to it 100% this time) and in the shop, I found a white tahini. Thanks to the insightful comments here I realized I had the “wrong” colored one. So after seeing the white and brown tahini on one shelf side by side (and what was written on them), I finally realized that the difference in color comes from the fact that the white tahini is made from sesame seeds that were hulled (no outer shell) and unhulled (grains with outer shell) make the brown one. A quick google search says the unhulled grains are better for you and since I prefer the taste of the brown tahini, I’ll go with that one next time. The degree of “sauciness” may be coming from the amount of lemon juice you put. The more you put, the more like a sauce it becomes. Adding water is probably a good idea too, if that’s your preference.

    I tried this meal even though I don´t like avocado. And I was once again confirmed that I and the avocado wouldn´t be friends! 🙂 But I ate my portion according to the meal plan yesterday.

    LOVED this dish!!! My husband said it was better than any restaurant food! I substituted Tzaziki sauce instead of tahini because the picture looked more like Tzaziki and I thought the combo with salmon and guacamole would be awesome…. And it was! 😊
