Sautéed Chicken with Arugula Strawberries Blue Cheese and Sherry Dressing (FM)

*Makes 2 portions

Ingredients for dressing:
1 tbsp shallot, minced
2 tbsp Swerve sweetener, granulated
3 tbsp sherry vinegar
2 tbsp balsamic vinegar
3 tbsp extra virgin olive oil
1/4 cup grapeseed oil (you can also use Algae or Avocado oil)
Salt & Pepper to taste

Ingredients:
8 oz skinless boneless chicken breasts, cut into 1/2 inch strips
2 tbsp cooking oil (coconut, avocado, algae, or grapeseed)
Paprika to taste
Salt & Pepper to taste
1 1/2 cups baby arugula leaves
2 cups sliced fresh strawberries
1/3 cup crumbled blue cheese

Instructions:

  1. Make the dressing: Add all the ingredients together into a blender and blend on high until smooth. Season with salt and pepper.
  2. Coat a large skillet with a thin layer of the cooking oil and heat over medium-high heat. Season the chicken lightly with salt, pepper, and paprika. Saute, stirring occasionally, until lightly browned all over and cooked all the way through.
  3. In a large bowl, mix the arugula with the strawberries, blue cheese, chicken, and about 1/4 cup of the dressing. Serve right away.

      I made this salad for dinner yesterday and splitted it into 2 servings. I agree with you, MIS.B that 1 lb of chicken is a lot.

    Tasty salad but I am confused of the portion to eat. Even with the half splitting I feel stuffed! Can anyone from Zuzka’s team enlighten us with the portions here please?

      You don’t have to eat everything on your plate. You should stop eating when you’re 80% full not when you feel stuffed. You can keep the leftovers for later, maybe as a snack.

        Thank you Zuzka for your reply! The next day I made a small portion of it and I was feeling good afterwards , not too full nor too hungry, just right 🙂

    Is it okay to substitute Feta for the Blue Cheese? I just started Zshred but I don’t like blue cheese 🙂 Thanks!
