Simple Baby Kale Salad (FM)

*yields one large or two small portions
Ingredients:
2 cups baby kale leaves
1 tbsp fresh parsley, chopped
1 red bell pepper, chopped
3 celery stalks, chopped
2 scallions, chopped
1 apple, chopped (Your favorite kind. I like Fuji or Envy.)
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
Instructions:
Add all ingredients into a salad bowl and toss until everything is coated in the olive oil and balsamic. Serve.

ZUZKA I HAVE A QUESTION. I WANT TO HAVE A VEGAN LUNCH ON A DAILY BASIS FOR OVER ALL HEALTH. CAN I EAT LENTILS FOR PROTEIN. I KNOW THEY CONTAIN SOME CARBS, WILL THIS SPIKE MY INSULIN?
