Spaghetti Squash Broccoli and Cheese Casserole Dish (FM)

*This recipe yields 4 equal portions

Ingredients:
1/2 a spaghetti squash (get rid off the seeds in the middle)
2 cups broccoli
1/3 cup sour cream
1 egg
1/2 cup shredded parmesan cheese
1 cup grated sharp cheddar cheese
1 clove garlic minced
Olive oil
Salt & Pepper

Instructions:

  1. Preheat oven to 425F degree.
  2. Drizzle the Spaghetti squash with olive oil, and season with salt & pepper. Place on a baking paper lined baking sheet cut side down. Bake for an hour until you can stick a fork through easily.
  3. Steam the broccoli.
  4. When the spaghetti squash is cooked through, take a fork and scrap the inside into a casserole dish. Add the broccoli and mix well. Add the parmesan cheese and mix again.
  5. In a small bowl whisk the egg with minced garlic and sour cream. Add to the casserole and mix well. Season with salt & pepper. Top with the shredded cheddar cheese to create an even layer.
  6. Cover the dish with tin foil and bake in the preheated oven for about 35 minutes until the cheese on top starts to turn lightly brown.

      You could use Greek yogurt.

    is the spaghetii squash the same as butternut suash?

      Hey Layla! No, spaghetti squash and butternut squash are different. Spaghetti squash is a yellow oblong squash. They should be heavy for their size. This insures they won’t dry out too much when cooking them. I actually cook mine whole in the microwave because they can be quite hard to cut in half while they are raw.

        I cook it in the microwave too! Tooks 15 minutes or so (depending on the size though).

    I love this recipe! My boyfriend likes it too! He’s not all that into veggies as I am so it’s great to have a dish we both like. This was my second recipe I tried from Zuzka, and I have made it 3-4 times in 2 months. DELICIOUS!

    Hi Z. This is a snack right? Bc theres not much protein for an actual meal and I see its about the size of 4 forks side by side.
