Spinach Artichoke Dip (WEM)

*This makes multiple servings depending on how many people you’re serving/ what your goals are.  For me, I would enjoy 3 small pieces of bread each topped with about 1-2 tablespoons of dip. (That is after I’ve earned it with my workout of course!)

Ingredients:
3 cups fresh spinach, chopped
1 can artichokes, chopped
1 garlic clove, finely minced
1/2 package (approx. 4 oz) of cream cheese, soft at room temp
1/4 cup shredded parmesan cheese
1/4 shredded mozzarella cheese
1 tablespoon sour cream
salt & pepper to taste

Instructions:

  1. In a medium sauce pan over medium heat, add the cheeses and the sour cream then stir frequently until melted and mixed well.
  2. Add the spinach and the minced garlic, stir constantly until wilted and mixed with the cheese sauce before adding the artichokes and mixing well.
  3. Let sit, stirring occasionally until warm throughout, season with salt & pepper to taste and then enjoy with some fresh bread slices (only if you’ve earned it with your workout though!) OR you can dip with cucumbers or celery for a FM style snack.

Note: This is for the entire recipe, not individual portions, which are going to vary depending on both the size and amount you’re going to eat. Just like you wouldn’t consume an entire cake or container of ice cream, you wouldn’t be choking down this entire recipe in one go. Relax, enjoy the treat, and be mindful of your portions.
