Sugar and Gluten Free Crepes (FM)

Crepes were my favorite dessert when I was a kid and the very first recipe I learned. My aunt thought me how to make the most delicious crepes out of scratch and then she would sing with me while we were cooking. Of course back then I didn’t care too much about the ingredients and whether or not it was healthy, besides, if it was so delicious, it must have been good for me. The original recipe calls for flour, sugar (a lot of sugar), milk, and eggs. I miss them, but I decided to come up a healthier variation (FM) that I could enjoy at anytime without having to earn it with my training.
*Makes about 4 crepes
Ingredients for the Crepes
3 whole eggs
2 1/2 oz cream cheese
1 tbsp erythritol
6 drops vanilla flavored Stevia
1 tsp cinnamon
1 tbsp almond flour
1 tsp baking soda
1/8 tsp xanthan gum
Ingredients for the filling
2 oz cream cheese
3/4 cup frozen mixed berries
1 tbsp erythritol
5 drops vanilla flavored Stevia
Instructions
1. Add all of the ingredients for the crepes into a blender and mix until completely smooth.
2. Heat a table spoon of avocado oil in a medium size pan over medium heat. It should sizzle when you pour the mixture into the pan. Pour about 1/3 cup of the mixture into the pan and spread it into a round shape by moving the pan and tilting it sideways.
3. Cover the pan with a lid and let cook until the bottom turns golden brown.
4. Then flip and and let it cook uncovered until the crepe is golden brown on both sides. You should get about 4 crepes out of this amount of batter.
5. Place all of the ingredients for the filling into the blender. It should be a good blender that can turn the berries and cream cheese into a soft ice cream. I use my Vitamix blender.
6. Spread the filling across each crepe and roll them up.

Avocado oil is healthy and it’s great for sautéing because it has a high smoke point.

Can I replace almond flour by coconut flour?

You can try, but the problem with coconut flour is that it makes everything super dry and it may not turn out the way it suppose to. You may have to adjust the ratio of the wet ingredients so that it’s not all dried out.

For the filling I love pancakes with apple, cinnamon and some honey.
Last time I made pancakes with buckwheat flour and they turned out really nice.

To find out the calorie/macro information for those who can’t go without it… you can pop the ingredients in a recipe maker such as on the myfitnesspal website and you can figure out the serving size you think is appropriate for your activity level.

What’s the difference between erithrytol and stevia? Can I use stevia instead of erithrytol? And for the “vanilla-flavored stevia” in this recipe, could I just use stevia and vanilla extract instead?

I have tried this out. I used vanilla extract instead of vanilla flavored stevia and coconut flour instead of almond flour because I didn’t have any almond flour. I think the most important thing is that the pan is pre-heated and the oil is sizzling when you pour the mixture into the pan, otherwise it wont be formed to a pan cake but stay like a chewing gum. I think it is a great alternative but I kinda didn’t like the taste so much. Yet I have to say that I am not the biggest fan of pancakes so for those few times that I won’t to eat a pancake, this recipe will definitely do a great job.
