Sugar and Gluten Free Crepes (FM)

Crepes were my favorite dessert when I was a kid and the very first recipe I learned. My aunt thought me how to make the most delicious crepes out of scratch and then she would sing with me while we were cooking. Of course back then I didn’t care too much about the ingredients and whether or not it was healthy, besides,  if it was so delicious, it must have been good for me. The original recipe calls for flour, sugar (a lot of sugar), milk, and eggs. I miss them, but I decided to come up a healthier variation (FM) that I could enjoy at anytime without having to earn it with my training.

*Makes about 4 crepes

Ingredients for the Crepes
3 whole eggs
2 1/2 oz cream cheese
1 tbsp erythritol
6 drops vanilla flavored Stevia
1 tsp cinnamon
1 tbsp almond flour
1 tsp baking soda
1/8 tsp xanthan gum

Ingredients for the filling

2 oz cream cheese
3/4 cup frozen mixed berries
1 tbsp erythritol
5 drops vanilla flavored Stevia

Instructions

1. Add all of the ingredients for the crepes into a blender and mix until completely smooth.

2. Heat a table spoon of avocado oil in a medium size pan over medium heat. It should sizzle when you pour the mixture into the pan. Pour about 1/3 cup of the mixture into the pan and spread it into a round shape by moving the pan and tilting it sideways.

3. Cover the pan with a lid and let cook until the bottom turns golden brown.

4. Then flip and and let it cook uncovered until the crepe is golden brown on both sides. You should get about 4 crepes out of this amount of batter.

5. Place all of the ingredients for the filling into the blender. It should be a good blender that can turn the berries and cream cheese into a soft ice cream. I use my Vitamix blender.

6. Spread the filling across each crepe and roll them up.

    I just made it for breakfast , with Nutella for my son.
    Lol what can I say ,DELICIOUS, plus guilty free.
    My son said ” mommy you making best pancakes ever”.

    Yumm!! I make crepes on a regular basis for my family and they use nutella, but I never have any….maybe with this recipe I’ll actually be able to have some . And they can still fill theirs with nutella if they want 🙂

    Humm…looking good ah! So with 3 eggs we can make 2 crepes? Can I use coconut flour or soy flour instead of almond? 😀

    my favorite way to have crepes, besides nutella and strawberries, is crepes suzette. Lemon juice would be nice mixed with the cream cheese mixture for an easy suzette

    I have not tried them yet they look yummy! I do have to say that I miss the times that you would cook your recipes in front of us, I always liked the demonstration plus it made it seem so much more fun for those of us that cook the same 15 meals all the time! I went to the store and bought olive oil Virgin first pressed and coconut oil and almond butter and I was looking for the erythritol and xanthan gum – I can’t find at my organic store even- sounds like a prescription almost 😉 I have always been one of those people that a low fat and low calorie so I could eat more, a little embarrassing out loud but I would like to incorporate more healthy fats in my diet , I bought an avocado yesterday for the first time. I was allergic when I was little but have grown out of most of my allergies or have learned how to eat them right . Such as nuts most of the time unless they are roasted I am allergic so I roast my own so they aren’t filled with salt . I’m going to try the avocado today I will tell you how that went. I always thought they were a bad food since they were high in fat but now that I am trying your diet I realize it’s smarter to eat smaller portions and be full for a long time then to eat large portions and be hungry all day long more satisfying to have an extra yummy meal that you eat slowly and feel fuller than to eat quantity, that leads to over eating anyway . Plus I think I am cheating my body out of the healthy fats , i’m sorry this is so long but I have another question . I always thought of cheese as being my healthy fat, is this under the wrong category because it does not have the heart healthy benefits ? Thank you for everything we all love you!

      I You can buy those ingredients on Amazon and with Prime membership, you can have it delivered in one day and not pay shipping. Cheese is considered a healthy fat as long as it’s grass fed just like the other dairy. Love you!! XOXO
