Sweet and Salty Avocado Toast (FM/WEM)

*This is a very simple, healthy and delicious snack or breakfast. The brie goat cheese brings the salty taste which works really grate with the sweetness of the grapes. It has a great balance of healthy fats and carbs, but it might be a WEM for those of you with low carb tolerance.
Ingredients:
2 pieces of Ezekiel Toast (with raisins and cinnamon)
1/2 avocado
8 grapes cut in halves
6 pecan halves, cut into smaller pieces
6 thin slices of Goat Brie cheese
Instructions:
- Toast the bread in a toaster
- Spread 1/4 avocado on each piece of toast and add 3 slices of cheese on top of each toast.
- Divide the grape halves equally between each toast and then top with pecan pieces.

Carbs: 62.3 g
Net Carbs: 44.2 g
Fat: 33.2 g
Protein: 26.7 g

Love Avacado toast so I Made this for breakfast and was Delicious 😋 I had to sub whole grain bread so only had one piece. And I subbed fresh grated Parmesan. And used less grapes. Great healthy filling breakfast. Now I’m going to pick a high intensity workout for today.

Perfect breakfast for watching the Indy 500! Didn’t have cinnamon raisin bread, so I just used regular Ezekiel bread and it was still wonderful. And it wouldn’t be an authentic Indy 500 breakfast, so I added a couple slices of pan-fried uncured 🥓. 😋🤤 Definitely one I will continue to make on a regular basis!

Yum, just went grocery shopping and was so hungry, was going to go to a vegetarian restaurant down the street but decided to make this instead. This hit the spot! 🙂
