Sweet And Spicy Mango Relish (FM)

Sweet_and_spicy_mango_relish

*Yields 4 portions

Ingredients
2 green apples, sliced into strips (julienned)
2 mangos, sliced into strips (julienned)
2 small red chili peppers, chopped finely
2 tbsp cilantro, roughly chopped
3 tbsp cashews
1 small shallot finely chopped
freshly ground black pepper

For the dressing
1 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
1 tbsp rice vinegar
1 tsp honey
1 tbsp Tamari (or other soy sauce)

Instructions

  1. Put all the ingredients into a bowl and toss well until the fruit is coated with dressing.
  2. Sprinkle with freshly ground pepper and serve.
