Thai Salad with Ginger Lime Dressing (FM)

Salad ingredients:
2 cups shredded cabbage blend (the one I used was a blend of napa cabbage, red cabbage and broccoli)
1/2 carrot, shredded
1 tablespoon red onion, sliced thin
1 scallion, diced
2 tablespoon cashews, chopped
1 tablespoon fresh cilantro, chopped
fresh basil (optional garnish)
Dressing ingredients:
1 lime, juiced
1/2 inch fresh ginger, minced
1/4 teaspoon fish sauce
1/2 teaspoon sesame oil
1/2 teaspoon honey
1/4 teaspoon crushed red pepper
Instructions:
- Whisk together the dressing ingredients and set aside.
- Add the shredded cabbage blend to a bowl, top with shredded carrots, sliced red onion, diced scallion and chopped cashews.
- Sprinkle on some fresh cilantro and optional basil leaves then top with dressing and enjoy!
