Zucchini Salad with Manchengo Cheese & Pine Nuts (FM)

*yields one portion

Ingredients:
2 zucchinis, julienned or shaved
Small wedge of manchengo cheese for grating
3 tbsp pine nuts
1 tbsp extra virgin olive oil
1 tsp balsamic vinegar
2 tsp freshly squeezed lemon juice
4 leaves of fresh basil, chopped
Salt & Pepper to taste

Instructions:

  1. Combine the olive oil, balsamic vinegar and lemon juice.
  2. Place the zucchini into a bowl, add the vinaigrette, basil and pine nuts and gently toss. Add salt & pepper to your liking.
  3. Add freshly grated (or shaved) manchego cheese on top. Serve.

    What is manchengo cheese? I’m not familiar with it.

      It’s a Spanish cheese. Don’t remember if it’s a cow or sheep cheese. It’s wonderful. I would consider it a mild cheese with a somewhat nutty flavor. Any deli section of a grocery store should have it.

        I can’t seem to find it at the natural food store I usually go to. I’ll keep my eye out for it and just use some Parmesan for now. Thank you!

    My garden is bursting with zucchini right now, so I am glad for this recipe! There is plenty of basil in my garden too.
