Zuzka's Bluffins Recipe (FM)

 INGREDIENTS
2 cups almond flour
1/2 tsp baking soda
1/4 tsp salt
2 eggs
1/2 cup coconut milk
1/2 cup sour cream
>1/2 teaspoon lemon extract
1/2 teaspoon vanilla extract
2 table spoons melted grass fed organic butter
5 tblsp Erithrytol (or Choc Zero Maple Syrup)
1/2 cup frozen blueberries

INSTRUCTIONS

Preheat oven to 350°F. Take a 12 piece muffin pan and place cupcake papers in each individual muffin hole.

In a medium size bowl mix the almond flour with the rest of the dry ingredient.

Beat the eggs lightly and pour them into a separate bowl. Mix in the sour cream, coconut milk, and melted butter until smooth. I suggest to use a handheld mixer with a whisker, just because it’s so easy and saves you a lot of time and effort.

Pour the egg mixture into the bowl with dry ingredients and use the handheld mixer to make a smooth batter.

Fold half the amount of blueberries into the batter and start distributing the mixture evenly into the muffin cups. This batter will not rise a lot in the oven so you can fill almost the entire paper cup.

Take the remaining amount of blueberries and place some on top of each muffin evenly.  Bake for about 20 minutes or until golden. Let it cool down, and then serve with grass fed butter. So yummy!

    Hello!

    I´ve just started the keto diet the first time, 5 days ago. Tomorrow could be the day where I aet carbs. But I´m already not sure, if I should do phase 1 for some days longer. For the first week I already saw differences in the mirror :). Of course I do my workout everyday in the zgym. 🙂 It´s fantastic. I love it. Thank you so much for your energy!!!I am searching all the time for good recipies. Thank you for yours. I find it hard all the time calculating the calories, especially in the evening is´s always difficult. This evening I had left 52g of fat and 38 of proteins and I didn´t know what to eat. I stood arround in the kitchen…almonds…hmm…no. drink oil…oh no…! and suddenly I found Halumi cheese and the problem was solved. 24g of fat, 18g of proteins and 1g of carbs. Perfect.

    I´m looking forward for the next recipies from you zuzana :)!!!I wish you the best for your diet!!

    The description refers to heavy cream which is not listed as an ingredient……help

    All this diet stuff feels like fitting a square into a circle. Some people just don’t fit it. I am a long distance runner as well as incorporate hiit workouts. If I didn’t eat carbs I would not be able to run well. I believe in eating good carbs and eliminating sugar. But “no carbs” is just madness. What’s wrong with sweet Potatos, quinoa, Greek yoghurt and brown rice as well as incorporatingyour fruits, veggies and high protein. I feel that works for me the best and are super energetic. Diet crazes are like fashion. Do what works best for you. Stay natural and enjoy all things good and well

    well I am not a big fan of cutting out all carbs. I did that a time and I felt very weak during workouts. Carbs are energy so if you cut them out where do you get the energy from then for your workouts? Also I noticed that if I cut out all the carbs I bloat like a ballon.

    I don’t know if you’ll read this Z but just in case I wanted to say I watched the last video you posted about the unique ab exercises and the first thing I thought was “man her skin looks so bright and fresh and clear!”… Just wanted to let you know I definitely noticed this diet is working for ya! 😉

    ahhhh zuzka I have tried keto before and it worked. can you please show a sample menu? I used to eat way to much cheese and would love to see how you do keto!?

    I am trying to eat a ketogenic diet, but include a small amount gluten free flour to make cakes…instead of very expensive almond flour, and the quantity of nuts to flour is worth questioning? what do others know? or Zuzka?
