Zuzka's Bluffins Recipe (FM)

 INGREDIENTS
2 cups almond flour
1/2 tsp baking soda
1/4 tsp salt
2 eggs
1/2 cup coconut milk
1/2 cup sour cream
>1/2 teaspoon lemon extract
1/2 teaspoon vanilla extract
2 table spoons melted grass fed organic butter
5 tblsp Erithrytol (or Choc Zero Maple Syrup)
1/2 cup frozen blueberries

INSTRUCTIONS

Preheat oven to 350°F. Take a 12 piece muffin pan and place cupcake papers in each individual muffin hole.

In a medium size bowl mix the almond flour with the rest of the dry ingredient.

Beat the eggs lightly and pour them into a separate bowl. Mix in the sour cream, coconut milk, and melted butter until smooth. I suggest to use a handheld mixer with a whisker, just because it’s so easy and saves you a lot of time and effort.

Pour the egg mixture into the bowl with dry ingredients and use the handheld mixer to make a smooth batter.

Fold half the amount of blueberries into the batter and start distributing the mixture evenly into the muffin cups. This batter will not rise a lot in the oven so you can fill almost the entire paper cup.

Take the remaining amount of blueberries and place some on top of each muffin evenly.  Bake for about 20 minutes or until golden. Let it cool down, and then serve with grass fed butter. So yummy!

    Awesome, Zuzka! Will try the recipe later on today. 🙂 I’ve been low carbing for a while now as well and I love it, and am wondering what you think about refeeds? Do you ever do them or think they are necessary? Not sure what to think about them, since they do kick you out of ketosis. Also, now that you do LCHF you probably don’t eat a lot of fruit apart from berries, right? A day of Zuzka-style eating would be great!

    Hi Zuzka, please dont recommend Truvia, since this product from coca-cola is produced from “highly processed” stevia leaf extract and erythritol ingredients and erythritol, which composes the majority of the product, is manufactured using GMOs.

    what about ecologic honey?

    I have the same question that Teresa does on May 19th. But I don’t see an answer… You refer to “Heavy Cream” but it’s not on the list. Would you explain, I don’t want to waste all these ingredients and have them not come out.

    I just did that… Don’t know what went wrong, but my muffins won’t become solid. I baked them for almost 40 minutes and they are already brown at the top, but inside they are completely wet, with some liquids… I have no idea what I did wrong 🙁
