Chicken Salad on Apple Slices (FM)

Ingredients
1 Fuji apple
2 tbsp gorgonzola cheese
1 tbsp chopped walnuts
1 tbsp chopped dried raisins or fresh seedless grapes
1 tbsp greek yogurt, sour cream, or mayo (I like the one with olive oil)
1 poached chicken breast chopped or torn into small pieces

Instructions
1. Mix the chicken pieces with the simple dressing out of one of the 3 options. Add raisins, walnuts, and mix it in well.
2. Cut the apple into 6 even slices and then spoon the chicken salad on top of each slice. Divide the 2 tbsp of gorgonzola evenly between the 6 slices and add on top of each.
The gorgonzola is salty enough so I didn’t even season the chicken with salt, and it was delicious just like this. I love the simplicity of this recipe and how fast you can make yourself this healthy snack.

As much as I’m clear about what to eat, how much and when in order to stay fit and lean, cooking is still not my strong suit. This was the first time I actually learned how to properly poach a chicken and when I found out how much faster it actually is and how much more juicier the chicken is with the proper technique, I instantly felt like I wasted half of my life cooking dry dinners. I had some mess eating this at work so I chopped the apple and added it to the mix. Serve on top of mixed greens and it’s one of my favorite salads. Made a big batch and fridge the rest for the week; makes the quickest, easiest lunch for those busy days.
Great recipe, Zuzka! I eat almost exclusively your recipes because they’re so varied and good!
