Chicken Salad on Apple Slices (FM)

Ingredients
1 Fuji apple
2 tbsp gorgonzola cheese
1 tbsp chopped walnuts
1 tbsp chopped dried raisins or fresh seedless grapes
1 tbsp greek yogurt, sour cream, or mayo (I like the one with olive oil)
1 poached chicken breast chopped or torn into small pieces

Instructions
1. Mix the chicken pieces with the simple dressing out of one of the 3 options. Add raisins, walnuts, and mix it in well.
2. Cut the apple into 6 even slices and then spoon the chicken salad on top of each slice. Divide the 2 tbsp of gorgonzola evenly between the 6 slices and add on top of each.
The gorgonzola is salty enough so I didn’t even season the chicken with salt, and it was delicious just like this. I love the simplicity of this recipe and how fast you can make yourself this healthy snack.

As much as I’m clear about what to eat, how much and when in order to stay fit and lean, cooking is still not my strong suit. This was the first time I actually learned how to properly poach a chicken and when I found out how much faster it actually is and how much more juicier the chicken is with the proper technique, I instantly felt like I wasted half of my life cooking dry dinners. Zuzka I love chicken salad. I usually put chopped apples in mine, but then comes the dilemma of what to eat it on….which bread would make it an earned meal so putting it on an apple slice instead is brilliant π I will definitely be using this recipe a lot.

Love that video and it looks delicious. The only one thing I woyld change is make my own mayo. Once you try homemade mayo, I promise you wont go back to the one you chose that is filled with sooo many additives.
The easiest one I have made was one with a wide mouth maso jar and a stick blender. Fresh mayo in less than 2min, no joke. I will post the recipe and the video for you so that you can try it.

He is the website. She uses a 1 whole egg but I like to add an extra yolk, it makes it super creamy that you can liyerally eat with a spoon. Not to mention that you can make some delicious salad dressings with it. Let me know how you like it π
