Peach Chicken Salad with Toasted Cumin & Almonds Vinaigrette (FM)

*yields 2-3 smaller portions

Ingredients:
2 cups shredded cooked chicken
2 peaches sliced
5 cups arugula
2 tbsp fresh cilantro finely chopped
2 tbsp fresh parsley finely chopped
1/2 cup sliced raw almonds
1 tbsp cumin seeds
2 tbsp freshly squeezed lemon juice
2 tbsp rice vinegar
1 tsp honey
3/4 tsp sweet paprika
1/4 cup extra virgin olive oil
1/4 tsp fine sea salt
freshly ground black pepper

Instructions:

  1. Toast the cumin seeds in a small frying pan over medium/low heat. For about 3 minutes, stirring regularly. Grind the toasted seeds in a spice grinder or mortar and pestle.
  2. In a bowl whisk together the vinegar, lemon juice, olive oil, honey, cumin, paprika, and salt until the vinaigrette is emulsified. Whisk in the cilantro and parsley and season with pepper.
  3. In the same frying pan toast the almonds over medium/low heat, stirring often until golden and fragrant, about 4 minutes. Set aside and let it cool down.
  4. In a large salad bowl toss together the chicken, sliced peaches, half of the almonds, and the arugula. Drizzle with 3-4 tbsp of the vinaigrette and toss gently until the vinaigrette coats the salad evenly. Garnish with remaining almonds.
  5. Store the remaining vinaigrette in an airtight container in the refrigerator for up to 3 days.

    This recipe looks delicious and refreshing for these last summer days and nights 🙂 Thank you so much!

    I noticed that you don’t usually include a lot of scrambled eggs in your breakfast meals, but I like the simplicity of something like (eggs, bacon, and maybe a little handful of berries). Is this a well balanced breakfast? For women, would it be 2 eggs, 2 bacon (or maybe replace the bacon with 1/4 avocado for variety?) and 1/4 cup berries for sweetness? Thoughts? Does anyone else have a go to egg breakfast?

    I hope your Friday is fantastic and I can never say how much I appreciate what you do for people!!

      Almost every breakfast i eat eggs eggs and eggs 😀 Scrambled eggs with blueberries(sounds odd but its delicious),scrambled eggs with spring onions,scrambled or fried eggs with avocado on a side,boiled eggs with wholemeal toast,mashed banana eggs and cottage cheese scramble:) you name it.:) Still wondering if its best choice but it works for me 🙂

        How many eggs do you eat in one sitting? And avocado? Or bacon and fruit? I want to keep my breakfasts FM since I usually don’t workout until after, but wasn’t sure how much is too much/too little… I’m trying to figure out the right portions so I’m always curious what fellow Zgym members do! Thanks for your reply!

          Hi Katie;) Usually i make breakfast out of two eggs,lets say with half of avocado or 2 pieces of bacon,if its scrambled so with handful of blueberies and for instance sprinkle of chia seeds😊 But yeah,it’s 2 eggs 😊 And to be completely honest i also still working on balancing my diet.I workout in the evening all the time and still hard not to sabotage all of my hard work 😊😄

    Hi Z,

    I just halved the recipe and did about 3.5 ounces of chicken, 1 peach, 1/4 cup sliced almonds, 2 1/2 cup lettuce etc…) . I hope that was correct? Let me know for future references what I should do differently if I need to :). Don’t want to sabotage my diet, haha.

    i couldn’t believe how good and tasteful this salad was! I am a vegetarian, so I used vege chicken, and I really enjoyed it! Thank you for this lovely recipe! Oh, and tomorrow is measuring day..can’t wait! Week 2, I am ready!!

    Zuzka, this is the third recipe I’ve made this week from your Meal Plan. My husband and I just started your plan! Everything is so delicious! You’ve given me an appreciation for the details that add tremendous flavor – the fresh herbs, a squeeze of lime, crushed nuts. You’ve seriously changed the way I will cook for the rest of my life!
